Sugar-Free Vanilla Panna Cotta Recipe

This creamy, indulgent, and sugar-free vanilla panna cotta is a perfect keto-friendly dessert. It’s silky smooth, easy to make, and only requires a few ingredients!


Ingredients:

  • 2 cups heavy whipping cream
  • 1 cup unsweetened almond milk (or any low-carb milk alternative)
  • 1 tbsp vanilla extract
  • 2 tbsp powdered erythritol (or sweetener of choice)
  • 1 tbsp gelatin powder (unflavored)
  • 1/4 cup cold water

Instructions:

1. Prepare the Gelatin:

  • In a small bowl, sprinkle the gelatin powder over 1/4 cup of cold water. Let it sit for 5-10 minutes to bloom and absorb the water.

2. Heat the Cream and Almond Milk:

  • In a medium saucepan, combine the heavy whipping cream, almond milk, and powdered erythritol. Heat over medium-low heat, stirring occasionally, until the mixture is warm (but not boiling). This should take about 3-5 minutes.

3. Dissolve the Gelatin:

  • Once the cream mixture is warm, add the bloomed gelatin and stir until completely dissolved. This should take about 2-3 minutes.
  • Stir in the vanilla extract and mix well.

4. Pour into Molds:

  • Remove the saucepan from the heat and pour the mixture into 4 small ramekins or serving glasses. Be sure to leave a little space at the top for easy serving.

5. Chill the Panna Cotta:

  • Let the panna cotta cool to room temperature for about 15-20 minutes. Once cooled, cover each ramekin with plastic wrap and refrigerate for at least 3-4 hours, or until set. For best results, refrigerate overnight.

6. Serve:

  • Once the panna cotta is fully set, remove it from the fridge and serve chilled. You can top it with a few fresh berries or a sprinkle of unsweetened cocoa powder for added flavor, though it’s delicious on its own as well!
