Low-Carb Zucchini Chips Recipe

(Serves 4)

These crispy, crunchy zucchini chips are a perfect low-carb snack that’s both healthy and delicious. They’re simple to make and packed with flavor!

Ingredients:

  • 2 medium zucchinis
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/4 tsp paprika (optional for a smoky flavor)
  • Salt and pepper, to taste
  • Fresh Parmesan cheese (optional, for topping)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.

2. Prepare the Zucchini:

  • Wash and dry the zucchinis. Slice them into thin rounds, about 1/8-inch thick. The thinner you slice them, the crispier they will become.
  • Lay the zucchini slices on a clean kitchen towel or paper towels and gently pat them dry to remove excess moisture. This step helps to make the chips crispier.

3. Season the Zucchini:

  • In a bowl, mix together the olive oil, garlic powder, onion powder, dried oregano, paprika, salt, and pepper.
  • Toss the zucchini slices in the seasoning mixture, making sure each piece is evenly coated.

4. Arrange on the Baking Sheet:

  • Lay the seasoned zucchini slices in a single layer on the prepared baking sheet. Ensure the slices don’t overlap for even crisping.

5. Bake the Zucchini Chips:

  • Bake the zucchini slices in the preheated oven for 1 to 1.5 hours, flipping the slices halfway through. Keep an eye on them toward the end to prevent burning.
  • Once they are golden and crispy, remove them from the oven.

6. Optional Garnish:

  • Sprinkle fresh Parmesan cheese over the chips while they’re still hot for extra flavor (optional).

7. Serve:

  • Allow the zucchini chips to cool for a few minutes before serving. Store any leftovers in an airtight container to keep them crispy.
