Keto Spinach and Feta Stuffed Omelet

(Serves 4)

Ingredients:

  • 8 large eggs
  • ½ cup heavy cream
  • 1 cup fresh spinach, chopped
  • ½ cup feta cheese, crumbled
  • 2 tbsp butter (for cooking)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp dried oregano (optional)

Instructions:

  1. Prepare the Egg Mixture:
    • In a mixing bowl, whisk together the eggs, heavy cream, salt, black pepper, garlic powder, and oregano.
    • Set aside.
  2. Cook the Spinach:
    • Heat a pan over medium heat and melt 1 tbsp of butter.
    • Add the chopped spinach and sauté for 1-2 minutes until wilted.
    • Remove from the pan and set aside.
  3. Cook the Omelets:
    • Heat another ½ tbsp butter in the pan over medium-low heat.
    • Pour in ¼ of the egg mixture and swirl the pan to distribute evenly.
    • Cook for 2-3 minutes until the eggs begin to set.
  4. Add the Filling:
    • Sprinkle ¼ of the feta cheese and sautéed spinach on one side of the omelet.
    • Fold the omelet over the filling and cook for another minute.
    • Transfer to a plate and repeat for the remaining servings.
  5. Serve and Enjoy!
    • Serve hot, garnished with extra feta or fresh herbs if desired.
