Keto Spinach and Feta Stuffed Omelet
(Serves 4)
Ingredients:
- 8 large eggs
- ½ cup heavy cream
- 1 cup fresh spinach, chopped
- ½ cup feta cheese, crumbled
- 2 tbsp butter (for cooking)
- ¼ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- ½ tsp dried oregano (optional)
Instructions:
- Prepare the Egg Mixture:
- In a mixing bowl, whisk together the eggs, heavy cream, salt, black pepper, garlic powder, and oregano.
- Set aside.
- Cook the Spinach:
- Heat a pan over medium heat and melt 1 tbsp of butter.
- Add the chopped spinach and sauté for 1-2 minutes until wilted.
- Remove from the pan and set aside.
- Cook the Omelets:
- Heat another ½ tbsp butter in the pan over medium-low heat.
- Pour in ¼ of the egg mixture and swirl the pan to distribute evenly.
- Cook for 2-3 minutes until the eggs begin to set.
- Add the Filling:
- Sprinkle ¼ of the feta cheese and sautéed spinach on one side of the omelet.
- Fold the omelet over the filling and cook for another minute.
- Transfer to a plate and repeat for the remaining servings.
- Serve and Enjoy!
- Serve hot, garnished with extra feta or fresh herbs if desired.
