Keto Low-Carb Beef Stroganoff recipe

(Serves 4)

Ingredients:

For the Stroganoff:

  • 1 ½ lbs beef sirloin or ribeye, thinly sliced (or 1lb of ground hamburger)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup beef broth
  • 1 cup heavy cream
  • 2 tsp Dijon mustard
  • ¼ cup sour cream
  • 1 tbsp Worcestershire sauce
  • 1 tbsp fresh parsley, chopped (for garnish)

For Serving (Low-Carb Options):

  • 4 cups steamed cauliflower rice OR
  • 4 cups zucchini noodles

Instructions:

1. Sear the Beef:

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Add the sliced beef and cook for 2-3 minutes until browned. Remove from the pan and set aside.

2. Cook the Vegetables:

  • In the same skillet, melt 2 tbsp butter.
  • Add the chopped onion and cook for 2 minutes until translucent.
  • Stir in the minced garlic and sliced mushrooms, cooking for another 3-4 minutes until softened.

3. Make the Stroganoff Sauce:

  • Sprinkle smoked paprika, salt, and black pepper over the mixture.
  • Pour in the beef broth, scraping up any browned bits from the pan.
  • Reduce heat to medium and add the heavy cream, Dijon mustard, and Worcestershire sauce. Stir well.

4. Combine and Simmer:

  • Return the cooked beef to the skillet and let it simmer in the sauce for 5 minutes.
  • Stir in sour cream and let it cook for another 2 minutes without boiling.

5. Serve and Garnish:

  • Serve hot over cauliflower rice or zucchini noodles.
  • Garnish with fresh parsley.
