Keto Low-Carb Beef Stroganoff recipe
(Serves 4)
Ingredients:
For the Stroganoff:
- 1 ½ lbs beef sirloin or ribeye, thinly sliced (or 1lb of ground hamburger)
- 2 tbsp butter
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup beef broth
- 1 cup heavy cream
- 2 tsp Dijon mustard
- ¼ cup sour cream
- 1 tbsp Worcestershire sauce
- 1 tbsp fresh parsley, chopped (for garnish)
For Serving (Low-Carb Options):
- 4 cups steamed cauliflower rice OR
- 4 cups zucchini noodles
Instructions:
1. Sear the Beef:
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Add the sliced beef and cook for 2-3 minutes until browned. Remove from the pan and set aside.
2. Cook the Vegetables:
- In the same skillet, melt 2 tbsp butter.
- Add the chopped onion and cook for 2 minutes until translucent.
- Stir in the minced garlic and sliced mushrooms, cooking for another 3-4 minutes until softened.
3. Make the Stroganoff Sauce:
- Sprinkle smoked paprika, salt, and black pepper over the mixture.
- Pour in the beef broth, scraping up any browned bits from the pan.
- Reduce heat to medium and add the heavy cream, Dijon mustard, and Worcestershire sauce. Stir well.
4. Combine and Simmer:
- Return the cooked beef to the skillet and let it simmer in the sauce for 5 minutes.
- Stir in sour cream and let it cook for another 2 minutes without boiling.
5. Serve and Garnish:
- Serve hot over cauliflower rice or zucchini noodles.
- Garnish with fresh parsley.
