Keto Low-Carb Beef and Broccoli Stir-Fry

(Serves 4)

Ingredients:

For the Beef:

  • 1 ½ lbs flank steak or sirloin, thinly sliced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

For the Stir-Fry Sauce:

  • ¼ cup soy sauce (or coconut aminos for lower sodium)
  • 2 tbsp beef broth
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • ½ tsp red pepper flakes (optional for spice)
  • ½ tsp xanthan gum (for thickening, optional)

For the Stir-Fry:

  • 2 tbsp avocado oil (or olive oil)
  • 4 cups broccoli florets
  • ½ small onion, sliced
  • 1 tbsp sesame seeds (for garnish)
  • 2 tbsp green onions, chopped (for garnish)

Instructions:

1. Marinate and Cook the Beef:

  • Season the sliced beef with salt and black pepper.
  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Sear the beef in batches for 2-3 minutes per side until browned. Remove and set aside.

2. Cook the Vegetables:

  • In the same skillet, add 2 tbsp avocado oil.
  • Stir-fry the broccoli and onion for 3-4 minutes until slightly tender but still crisp.

3. Make the Stir-Fry Sauce:

  • In a small bowl, whisk together soy sauce, beef broth, sesame oil, rice vinegar, garlic, ginger, and red pepper flakes.
  • If using xanthan gum, sprinkle it in and whisk well to thicken.

4. Combine Everything:

  • Return the cooked beef to the skillet with the vegetables.
  • Pour in the sauce and stir well. Let it cook for 2-3 minutes until heated through and well coated.

5. Serve and Garnish:

  • Sprinkle with sesame seeds and green onions before serving.
  • Pair with cauliflower rice for a complete keto meal.
