Keto Low-Carb Beef and Broccoli Stir-Fry
(Serves 4)
Ingredients:
For the Beef:
- 1 ½ lbs flank steak or sirloin, thinly sliced
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
For the Stir-Fry Sauce:
- ¼ cup soy sauce (or coconut aminos for lower sodium)
- 2 tbsp beef broth
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- ½ tsp red pepper flakes (optional for spice)
- ½ tsp xanthan gum (for thickening, optional)
For the Stir-Fry:
- 2 tbsp avocado oil (or olive oil)
- 4 cups broccoli florets
- ½ small onion, sliced
- 1 tbsp sesame seeds (for garnish)
- 2 tbsp green onions, chopped (for garnish)
Instructions:
1. Marinate and Cook the Beef:
- Season the sliced beef with salt and black pepper.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Sear the beef in batches for 2-3 minutes per side until browned. Remove and set aside.
2. Cook the Vegetables:
- In the same skillet, add 2 tbsp avocado oil.
- Stir-fry the broccoli and onion for 3-4 minutes until slightly tender but still crisp.
3. Make the Stir-Fry Sauce:
- In a small bowl, whisk together soy sauce, beef broth, sesame oil, rice vinegar, garlic, ginger, and red pepper flakes.
- If using xanthan gum, sprinkle it in and whisk well to thicken.
4. Combine Everything:
- Return the cooked beef to the skillet with the vegetables.
- Pour in the sauce and stir well. Let it cook for 2-3 minutes until heated through and well coated.
5. Serve and Garnish:
- Sprinkle with sesame seeds and green onions before serving.
- Pair with cauliflower rice for a complete keto meal.
