Keto Garlic Butter Chicken Thighs

(Serves 4)

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped (for garnish)
  • 1 tbsp lemon juice (optional)

Instructions:

  1. Prepare the Chicken:
    • Pat the chicken thighs dry with a paper towel.
    • Season both sides with garlic powder, onion powder, paprika, thyme, oregano, salt, and black pepper.
  2. Sear the Chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Place the chicken thighs skin-side down and cook for 5-7 minutes until the skin is golden brown and crispy.
    • Flip and cook for another 3-4 minutes.
  3. Add the Garlic Butter:
    • Reduce heat to medium and add butter to the pan.
    • Once melted, add minced garlic and cook for 30 seconds until fragrant.
    • Spoon the garlic butter over the chicken while it cooks for another 5 minutes or until the internal temperature reaches 165°F (75°C).
  4. Serve and Garnish:
    • Remove from heat and drizzle with lemon juice if desired.
    • Garnish with fresh parsley and serve hot.
