Keto Garlic Butter Chicken Thighs
(Serves 4)
Ingredients:
- 4 bone-in, skin-on chicken thighs
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- ½ tsp dried thyme
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 1 tbsp fresh parsley, chopped (for garnish)
- 1 tbsp lemon juice (optional)
Instructions:
- Prepare the Chicken:
- Pat the chicken thighs dry with a paper towel.
- Season both sides with garlic powder, onion powder, paprika, thyme, oregano, salt, and black pepper.
- Sear the Chicken:
- Heat olive oil in a large skillet over medium-high heat.
- Place the chicken thighs skin-side down and cook for 5-7 minutes until the skin is golden brown and crispy.
- Flip and cook for another 3-4 minutes.
- Add the Garlic Butter:
- Reduce heat to medium and add butter to the pan.
- Once melted, add minced garlic and cook for 30 seconds until fragrant.
- Spoon the garlic butter over the chicken while it cooks for another 5 minutes or until the internal temperature reaches 165°F (75°C).
- Serve and Garnish:
- Remove from heat and drizzle with lemon juice if desired.
- Garnish with fresh parsley and serve hot.
