Keto Creamy Tuscan Chicken

Ingredients:
For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp Italian seasoning
- 1 tbsp olive oil
- 1 tbsp butter
For the Creamy Tuscan Sauce:
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- 2 cups fresh spinach
- ¼ cup fresh basil, chopped (for garnish)
Instructions:
1. Cook the Chicken:
- Season the chicken with salt, black pepper, garlic powder, and Italian seasoning.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear the chicken for 5-6 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
2. Make the Tuscan Sauce:
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
- Stir in the sun-dried tomatoes and cook for 1 minute.
- Pour in the heavy cream and chicken broth, then stir in Parmesan cheese, Italian seasoning, and red pepper flakes.
- Let the sauce simmer for 3-4 minutes until slightly thickened.
3. Combine and Simmer:
- Add the spinach to the sauce and let it wilt.
- Return the chicken to the skillet and let it simmer in the sauce for 3-5 minutes.
4. Serve and Garnish:
- Garnish with fresh basil and serve hot.
- Pair with cauliflower rice or zucchini noodles for a complete keto meal.
