Keto Creamy Tuscan Chicken

(Serves 4)

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • 1 tbsp olive oil
  • 1 tbsp butter

For the Creamy Tuscan Sauce:

  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • 2 cups fresh spinach
  • ¼ cup fresh basil, chopped (for garnish)

Instructions:

1. Cook the Chicken:

  • Season the chicken with salt, black pepper, garlic powder, and Italian seasoning.
  • Heat olive oil and butter in a large skillet over medium-high heat.
  • Sear the chicken for 5-6 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.

2. Make the Tuscan Sauce:

  • In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
  • Stir in the sun-dried tomatoes and cook for 1 minute.
  • Pour in the heavy cream and chicken broth, then stir in Parmesan cheese, Italian seasoning, and red pepper flakes.
  • Let the sauce simmer for 3-4 minutes until slightly thickened.

3. Combine and Simmer:

  • Add the spinach to the sauce and let it wilt.
  • Return the chicken to the skillet and let it simmer in the sauce for 3-5 minutes.

4. Serve and Garnish:

  • Garnish with fresh basil and serve hot.
  • Pair with cauliflower rice or zucchini noodles for a complete keto meal.
