Keto Cheesy Cauliflower Rice with Sausage

(Serves 4)

Ingredients:

  • 4 cups riced cauliflower (fresh or frozen)
  • 1 lb sausage (Italian or smoked, sliced)
  • 2 tbsp butter
  • ½ cup heavy cream
  • 1 cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp dried oregano
  • ½ tsp red pepper flakes (optional for spice)
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions:

1. Cook the Sausage:

  • Heat 1 tbsp olive oil in a large skillet over medium heat.
  • Add the sliced sausage and cook for 5-6 minutes until browned. Remove from the pan and set aside.

2. Sauté the Aromatics:

  • In the same skillet, melt 2 tbsp butter.
  • Add the chopped onion and cook for 2 minutes until soft.
  • Stir in the minced garlic and cook for another 30 seconds until fragrant.

3. Cook the Cauliflower Rice:

  • Add the riced cauliflower to the skillet and stir well.
  • Season with paprika, salt, black pepper, oregano, and red pepper flakes.
  • Cook for 5-6 minutes, stirring occasionally, until the cauliflower softens.

4. Make it Cheesy:

  • Pour in the heavy cream and mix well.
  • Stir in the shredded cheddar and Parmesan cheese, letting it melt into the cauliflower rice.

5. Combine and Serve:

  • Return the cooked sausage to the skillet and mix everything together.
  • Cook for another 2 minutes until heated through.
  • Garnish with fresh parsley and serve hot.
