Keto Cheesy Cauliflower Rice with Sausage
(Serves 4)
Ingredients:
- 4 cups riced cauliflower (fresh or frozen)
- 1 lb sausage (Italian or smoked, sliced)
- 2 tbsp butter
- ½ cup heavy cream
- 1 cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- ½ small onion, finely chopped
- 2 cloves garlic, minced
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp dried oregano
- ½ tsp red pepper flakes (optional for spice)
- 1 tbsp olive oil
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions:
1. Cook the Sausage:
- Heat 1 tbsp olive oil in a large skillet over medium heat.
- Add the sliced sausage and cook for 5-6 minutes until browned. Remove from the pan and set aside.
2. Sauté the Aromatics:
- In the same skillet, melt 2 tbsp butter.
- Add the chopped onion and cook for 2 minutes until soft.
- Stir in the minced garlic and cook for another 30 seconds until fragrant.
3. Cook the Cauliflower Rice:
- Add the riced cauliflower to the skillet and stir well.
- Season with paprika, salt, black pepper, oregano, and red pepper flakes.
- Cook for 5-6 minutes, stirring occasionally, until the cauliflower softens.
4. Make it Cheesy:
- Pour in the heavy cream and mix well.
- Stir in the shredded cheddar and Parmesan cheese, letting it melt into the cauliflower rice.
5. Combine and Serve:
- Return the cooked sausage to the skillet and mix everything together.
- Cook for another 2 minutes until heated through.
- Garnish with fresh parsley and serve hot.
