(Serves 4)
This keto-friendly cauliflower crust pizza is a delicious, low-carb alternative to traditional pizza. It’s crispy, cheesy, and packed with flavor!
Ingredients:
For the Cauliflower Crust:
- 1 medium head of cauliflower (about 4 cups of cauliflower rice)
- 1 large egg
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- Salt and pepper, to taste
For the Pizza Topping:
- 1/2 cup pizza sauce (low-carb or sugar-free)
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup pepperoni or any desired toppings (e.g., vegetables, cooked chicken, mushrooms)
- Fresh basil leaves (optional for garnish)
Instructions:
1. Prepare the Cauliflower Rice:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Cut the cauliflower into florets and pulse in a food processor until you get a rice-like texture. You should have about 4 cups of cauliflower rice.
- Transfer the cauliflower rice to a microwave-safe bowl and microwave it on high for 4-5 minutes, or until soft. Let it cool for a few minutes.
- Once cooled, place the cauliflower rice in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
2. Make the Crust:
- In a large mixing bowl, combine the cauliflower rice, egg, shredded mozzarella, Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and pepper. Stir until everything is well combined.
- Transfer the mixture to the prepared baking sheet and shape it into a round pizza crust (about 10-12 inches in diameter).
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and crispy around the edges.
3. Add Toppings:
- Remove the crust from the oven and spread the pizza sauce evenly on top.
- Sprinkle the shredded mozzarella cheese evenly over the sauce and add your choice of toppings (pepperoni, veggies, etc.).
- Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
4. Serve:
- Once the pizza is done, remove it from the oven and let it cool for a minute before slicing.
- Garnish with fresh basil, if desired, and serve immediately.
