Keto Cauliflower Crust Pizza Recipe

(Serves 4)

This keto-friendly cauliflower crust pizza is a delicious, low-carb alternative to traditional pizza. It’s crispy, cheesy, and packed with flavor!


Ingredients:

For the Cauliflower Crust:

  • 1 medium head of cauliflower (about 4 cups of cauliflower rice)
  • 1 large egg
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste

For the Pizza Topping:

  • 1/2 cup pizza sauce (low-carb or sugar-free)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup pepperoni or any desired toppings (e.g., vegetables, cooked chicken, mushrooms)
  • Fresh basil leaves (optional for garnish)

Instructions:

1. Prepare the Cauliflower Rice:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Cut the cauliflower into florets and pulse in a food processor until you get a rice-like texture. You should have about 4 cups of cauliflower rice.
  • Transfer the cauliflower rice to a microwave-safe bowl and microwave it on high for 4-5 minutes, or until soft. Let it cool for a few minutes.
  • Once cooled, place the cauliflower rice in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.

2. Make the Crust:

  • In a large mixing bowl, combine the cauliflower rice, egg, shredded mozzarella, Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and pepper. Stir until everything is well combined.
  • Transfer the mixture to the prepared baking sheet and shape it into a round pizza crust (about 10-12 inches in diameter).
  • Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and crispy around the edges.

3. Add Toppings:

  • Remove the crust from the oven and spread the pizza sauce evenly on top.
  • Sprinkle the shredded mozzarella cheese evenly over the sauce and add your choice of toppings (pepperoni, veggies, etc.).
  • Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

4. Serve:

  • Once the pizza is done, remove it from the oven and let it cool for a minute before slicing.
  • Garnish with fresh basil, if desired, and serve immediately.
