Keto Bacon-Wrapped Pork Tenderloin

Ingredients:
- 1 ½ lbs pork tenderloin
- 8-10 slices bacon (thin-cut)
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp dried thyme
- 1 tbsp Dijon mustard
- 1 tbsp butter (melted)
Instructions:
1. Prepare the Pork Tenderloin:
- Preheat the oven to 375°F (190°C).
- Pat the pork tenderloin dry with a paper towel.
- In a small bowl, mix salt, black pepper, garlic powder, smoked paprika, and thyme.
- Rub the pork with olive oil, Dijon mustard, and the seasoning mix.
2. Wrap with Bacon:
- Lay out the bacon slices on a cutting board, slightly overlapping.
- Place the pork tenderloin on top and carefully wrap the bacon around it, securing the ends underneath.
3. Sear for Extra Flavor:
- Heat a large oven-safe skillet over medium-high heat.
- Place the bacon-wrapped pork seam-side down and sear for 2-3 minutes until browned.
- Rotate and sear on all sides.
4. Bake Until Tender:
- Transfer the skillet to the preheated oven.
- Roast for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
- Brush with melted butter in the last 5 minutes for extra flavor.
5. Rest, Slice, and Serve:
- Let the pork rest for 5-10 minutes before slicing.
- Serve with roasted Brussels sprouts or cauliflower mash for a complete keto meal.
