Keto Bacon-Wrapped Pork Tenderloin

Ingredients:

  • 1 ½ lbs pork tenderloin
  • 8-10 slices bacon (thin-cut)
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp dried thyme
  • 1 tbsp Dijon mustard
  • 1 tbsp butter (melted)

Instructions:

1. Prepare the Pork Tenderloin:

  • Preheat the oven to 375°F (190°C).
  • Pat the pork tenderloin dry with a paper towel.
  • In a small bowl, mix salt, black pepper, garlic powder, smoked paprika, and thyme.
  • Rub the pork with olive oil, Dijon mustard, and the seasoning mix.

2. Wrap with Bacon:

  • Lay out the bacon slices on a cutting board, slightly overlapping.
  • Place the pork tenderloin on top and carefully wrap the bacon around it, securing the ends underneath.

3. Sear for Extra Flavor:

  • Heat a large oven-safe skillet over medium-high heat.
  • Place the bacon-wrapped pork seam-side down and sear for 2-3 minutes until browned.
  • Rotate and sear on all sides.

4. Bake Until Tender:

  • Transfer the skillet to the preheated oven.
  • Roast for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  • Brush with melted butter in the last 5 minutes for extra flavor.

5. Rest, Slice, and Serve:

  • Let the pork rest for 5-10 minutes before slicing.
  • Serve with roasted Brussels sprouts or cauliflower mash for a complete keto meal.
