Keto Avocado Chicken Salad

Ingredients:
- 2 cups cooked chicken breast, shredded or diced
- 2 ripe avocados, mashed
- ¼ cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp salt
- ¼ tsp black pepper
- ¼ cup red onion, finely chopped
- ¼ cup celery, finely chopped
- ¼ cup fresh cilantro or parsley, chopped
- 2 tbsp olive oil (optional, for extra fat)
Instructions:
- Prepare the Dressing:
- In a large bowl, mash the avocados and mix them with mayonnaise, lemon juice, Dijon mustard, garlic powder, onion powder, salt, and black pepper.
- Combine the Ingredients:
- Add the shredded chicken, chopped red onion, celery, and fresh herbs to the bowl.
- Drizzle with olive oil (if using) and mix everything until well combined.
- Chill and Serve:
- Let the salad sit in the refrigerator for about 15 minutes to allow flavors to meld.
- Serve over lettuce wraps, in a bowl, or with keto-friendly crackers.
