Keto Avocado Chicken Salad

Ingredients:

  • 2 cups cooked chicken breast, shredded or diced
  • 2 ripe avocados, mashed
  • ¼ cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ cup red onion, finely chopped
  • ¼ cup celery, finely chopped
  • ¼ cup fresh cilantro or parsley, chopped
  • 2 tbsp olive oil (optional, for extra fat)

Instructions:

  1. Prepare the Dressing:
    • In a large bowl, mash the avocados and mix them with mayonnaise, lemon juice, Dijon mustard, garlic powder, onion powder, salt, and black pepper.
  2. Combine the Ingredients:
    • Add the shredded chicken, chopped red onion, celery, and fresh herbs to the bowl.
    • Drizzle with olive oil (if using) and mix everything until well combined.
  3. Chill and Serve:
    • Let the salad sit in the refrigerator for about 15 minutes to allow flavors to meld.
    • Serve over lettuce wraps, in a bowl, or with keto-friendly crackers.
